Baked Goods
1-1/2 cups all-purpose flour (375 mL)
1/2 cup granulated sugar (125 mL)
2-1/2 teaspoons baking powder (12 mL)
1/4 teaspoon salt (1 mL)
1 egg
3/4 cup milk (175 mL)
1/3 cup melted butter (75 mL)
1 cup blueberries (fresh or frozen)
(250 mL)
1 tablespoon grated lemon rind
2 tablespoons granulated sugar
In mixing bowl, sift together flour, 1/2 cup sugar, baking powder and salt.
In smaller bowl, beat egg; add milk and melted butter. Add liquid to dry ingredients all at once; stir just until moistened. Stir in blueberries. Spoon into prepared muffin tins, filling about 3/4 full.
Combine lemon rind with remaining sugar; sprinkle over top of batter.
Bake in 400 F (200 C) oven for 20 min. or until top of muffins spring back when lightly touched. Makes 12 medium.
